I was inspired by Chobani's #MadeWithChobani Project, to create a recipe using Chobani yogurts.
I had a container of the Blackberry Chobani Greek Yogurt....

So I decided to make Almond Blackberry Greek Yogurt Muffins!
To begin, you need the following
ingredients:
These muffins are very light in sweetness with a delicate aroma of blackberry and almond.
The only thing they were missing were fresh blackberries to be baked inside!
But missing blackberries or not, they make a great on the go breakfast!
To begin, you need the following
ingredients:
1 1/2 cups of flour
2 teaspoons of baking powder
1 teaspoon of Almond extract
1/2 cup of oil (I used corn oil)
1 container of Chobani's Blackberry Greek Yogurt
1/2 of teaspoon salt
1 cup of sugar
3 eggs
- Preheat your oven to 350 degrees.
- While that is heating up, mix all ingredients in a mixing bowl.
- {I started by dumping all the dry ingredients in first, then adding in the wet ingredients and hand whisking it all together until there were no clumps.}
- Once the batter is thoroughly mixed, spoon into each muffin cup
- Bake for about 20 minutes.
- Let them cool for a few minutes
- And they are ready to eat!
Yield: Approx. 16 muffins
Tips:
- You can use any flavor of yogurt and any flavor of extract.
- If the flavors pair well together, it is sure to be a good match!
- You can use applesauce instead of oil
- Exchange white flour for whole wheat.
- You could also use your preferred sugar substitute
- Mix in some fresh fruits! (I would have used blackberries in this recipe, but didn't have any on hand.)
