Needed a quick and fun after school snack for my lil guy and came across
Melissa's Cream Cheese Sprinkle Sugar Cookies recipe over at Keepin It Kind.
Realized I didn't have cornmeal but decided to make them anyway!
To make these cookies, you need:
- 1 1/4 C flour
- 1/4 C cornmeal
- 1/8 tsp salt
- 1/2 C butter, softened
- 1/2 C sugar
- 4 oz cream cheese
- splash of almond milk
- sprinkles
As I mentioned, I didn't have cornmeal so I just used and extra 1/4 cup of flour in place. I didn't have the splash of almond milk either, so I made my own "splash"! I whisked about a TBS of vanilla yogurt and cold water together to brush across the cookies.
You begin by combining the flour, cornmeal, and salt in a medium bowl and set aside. Then beat the butter, sugar, and cream cheese together and stir the flour mixture in a little at a time. I just threw all the ingredients in a bowl and mushed them together with my hand, kneading several times to get the dough all mixed together. Next you chill the dough in the refrigerator for at least 30 minutes (or 15min in freezer to speed up the process)
Preheat the oven to 350 degrees Fahrenheit. After the chill time passes, roll the dough out on a floured surface and use your fun cookie cutters!! Then brush tops of the cookies with a small amount of almond milk (or your own "splash") and top with sprinkles!
Bake cookies for 15 to 18 minutes (or until they smell ready). Let cool and enjoy!
These cookies aren't very sweet and have a familiar biscuit flavor to them,
but they are just as tasty and great for a fun after school snack!
