Microwave Sugar Cookies +Recipe

On occasion, I'll be craving a sweet (ok I ALWAYS crave a sweet) but I don't always have the time or want, to spend in the kitchen, baking up a yummy dessert. So when times like these pop up, I like to have easy baking on hand. I came across a fun Microwave Sugar Cookie Recipe! I found it over at Indian Mirror.

( for my cookies I split recipe in half)
To make these yummy cookies you need:

3/4 Cup of Butter-softened
1 Cup of Sugar
2 Eggs-beaten
1 tsp of Vanilla Extract
2 2/3 Cups of Flour
2 tsp of Baking Powder
and 1/2 tsp of Salt

First, you cream the butter in a bowl and gradually add in the sugar.
Beat in the eggs and vanilla. Then add in the flour, baking powder and salt. Mix to form a nice mold-able dough.
Chill in the fridge for an hour, until firm. (I don't suggest freezing it for extra time because it makes it a little too hard)

Once dough is chilled, you can then roll it out to about 1/4 inch thick and use cookie cutters to cut out shapes! Line the cookies on wax paper, on a plate, and cook for 2 Minutes on High.



I rolled my dough into a log like shape before cooling, and just cut thin slices for easier making. This made a ton of cookies
(and I SPLIT the recipe!!!) , and allowed me to keep the dough for three days, to make a few cookies each time I wanted :)

Delicious and easy cookies. Not as cute as they would be if I had used cookie cutters, but that's ok :) They will be hot when first out of microwave. Let them cool and eat them right away when cooled. The longer they sit, the harder they get. Seriously. They turned in to dog biscuits when I let them sit too long haha. Still fun to gnaw on though ;) And great dipped in milk!


NOTE: [Make sure you microwave your cookies on a plate-with the wax paper on-because the 2nd time around, I tried just microwaving the cookies on wax paper without a plate and they all burnt! ]
